Ingredients
- 750mls dry gin
- 120g demerara sugar
- 2 bay leaves
- 10g Green peppercorns
- 15g juniper berries
- 350g apples roughly chopped
Method
- Place the chopped apples in a vacuum pouch or Kilner jar and cover with 600mls of the gin
- Place a small pan over a medium heat. Add the sugar, bay leaves, pepper corns and juniper, slowly bring to a caramel
- Cease the caramel by using the remainder of the gin. Add 50ml of water to the pan and gently simmer till a smooth liquid is formed, set aside to cool. When cool add to the pouch or Kilner jar
- Place in a preheated water bath (65 degrees Celsius) for 12 hours
Chef’s tip:
Serve the gin over ice and garnish with apple, topped with ginger ale or tonic
